The art of the old Bulgarian cuisine: The culinary heritage of the 1930s. Housekeeping in the old Sofia homes. Volume 2
Изкуството на старата българска кухня. Кулинарното наследство от 30-те години на XX век
Language: Bulgarian
This book speaks with the language of 1930s cuisine. The edition includes more than 300 recipes. The recipes have echoes of the "great Sofia culinary war" of the 1920s and 1930s - Macedonians versus Panagyurans. The Panagyurans settled in Sofia earlier, at the end of the 19th century, so the dishes from their inns permanently entered the tradition of the capital's cuisine. Waves of Macedonian refugees dotted Sofia with taverns and beerhouses, which not only attracted customers in the evening, but also took care of their quick meals during the day. There was even a clash over territories, but gradually things settled down, and the two culinary traditions greatly enriched the generally impoverished roots cuisine of the Sofians.
